When you make a specialty beer with fruit, you want it to look brilliant as well as taste amazing. This Pectic Enzyme will take the haze out of your brew and keep it looking clear.
Pectic Enzymes are used to reduce the hazing effect of pectins when using real fruit in your beer, wines, or meads by breaking down the pectin in the fruit so it doesn’t show up as a haze in your finished product. 
To use, mix 2 tsp of pectic enzyme with cold water and add to 5 - 6 gallon of wort before the start of fermentation. Enzymes denature above 150° Fahrenheit (approximately) so only add them to your product after it has cooled.

Let me begin by saying that I want 2 oz, not 1..Please change that and charge me appropriately. I was unable, in checkout, to change quantity. I use this product when making Jaboticaba melomel to prevent the formation of jelly-like cake at the fermenter bottom.

Why wasn’t sodium benzoate listed as an ingredient online? And is the level of the benzoate high enough to hinder me to do bottle condition/carbonation ?

BEST ANSWER: We have never had a problem with fermentation or bottle conditioning when using this in our beers and wines. The benzoate is only used as a preservative for the powder.

Pectin Enzymes (2-1oz) arrived in good time but had the letter carrier quite concerned as the box was roughed up and there was a white powdery substance coming out. Turns out, all was good except that the bag seal on one of the bags was angled and missed an area on one side, allowing some to leak. Just thot you might want to know. Aloha, Diki

Effective product that works as advertised
Definitely works. I’ve done trials this vintage with and without pectic enzymes and the must with enzymes breaks down better. Better color extraction, easier press. Just need to remember not to add bentonite when using.
