Description

The perfect dry yeast strain for brewing traditional Kölsch-style beers and other neutral ales. LalBrew Köln's neutral character accentuates delicate hop aromas while imparting subtle fruity esters. Through expression of a beta-glucosidase enzyme LalBrew Köln can promote hop biotransformation and accentuate hop flavor and aroma. Colder fermentations will be more neutral in character, while warmer fermentations will have more fruit-forward ester profile.

Aroma: Sightly fruity, more neutral with colder ferments
Attenutation: Medium to High
Fermentation Range: 54-68°F
Flocculation: Medium to High
Alcohol Tolerance: 9% ABV

We'll see....
Waiting to see what the FG is, but it seemed to peter out quite early. I'd recommend doing a starter with an OG over 1.050.

Dry Kolsch Yeast.
This yeast worked as expected and produced good Kolsch. Per recommendation I pitched 2 packets per 5 gallon batch. I didn't do any prior rehydration but it still proved to be effective. Lag time for the 2 times I've used it has been consisently about 30 hours. The only thing is having to pitch 2 packs as opposed to just 1 but still it is a good dry Kolsch yeast especially when you have concerns about shipping liquid yeast.

A dry Kolsch yeast?
Never thought this would happen. A dry Kolsch yeast. Lallemand you have convinced me that I was wrong about dry yeast. After a decade of using exclusively liquid yeast I have started using dry yeast again. I love the packaging (vacuum packed). I used this yeast to make a Dunkel. This was my 7th attempt at a Dunkel. I have never been able to get the right attenuation and clarity to go along with the maltiness until I found this yeast, This yeast can be used to make a lager style without the long cold conditioning step. Yeah, there are other Kolsch strains that can do this, but not with this level of clarity. I will warn you that this yeast can lag, so don't fret if you don't have airlock activity within 24 hours, sometimes you have to wait a little while.

Not the style I was expecting.
Fermentation at 68 lower fluctuation than I expected and taste more like a Belgian than a German strain clove and a hint of banana will not use again for a kolsch unless I was gonna lager it at a lower temp. Would make a good Belgian style especially if you like coriander and orange peel in your brew.

Great yeast! Especially if you need a fast fermentation
This yeast is fantastic. I’ve done lots of seltzer and great ciders with it and unbelievably fast fermentation at warm temps. Up to 90 degrees. Believe it or not I did a seltzer in 3 days and then threw apple juice on that yeast cake and it fermented to 1,007 in under 10 hours and was fantastic no fusils…. Haven’t done a beer yet but I will for sure !! Fun stuff

Wow! What a versitile yeast.
This Kolsch yeast is just as effective in Pale Ales and IPA's as it is with German hybrid ales like Kolsch and Alt. This would be a great house ale yeast.

Great Kolsch yeast
First kolsch I have made, feel it is a good representation from some imported kolschs I have tasted. Started ferm temps at 64 worked up to 66. Did rehydrate with Go-Ferm and yeast nutrient before pitching. Feel like there could be a bit more fruity character to nose and taste, but over all would use again. Maybe higher ferm temps for more fruit. Does have a slight sulfur taste, but believe that will go away as I have read. 81% attenuation, FG 1.010

first time using this yeast
I wanted to make a nice light summer beer and decided on a Kolsch but have never tried a dry yeast for this style . After reading about the Lalbrew Kolsch I decided to try dry yeast and I was very surprised how well it is working @ 64 deg. and also an amazing krausen . I will use this brand again .
