Please select from the following option(s) to see pricing and availability.

ICV D254 Dry Wine Yeast is a vigorous fermenter with a short lag time for both red and white wines.
Rhone isolate for both red and white wine. This yeast creates enhanced mouthfeel and color stability. Benefits include a high fore-mouth volume, big mid-palate mouthfeel, and intense fruit concentration in all wines, with the following differences: In red wines, it gives a jammy, concentrated, yet soft ripe fruit character, that can have licorice and a mild spiciness to it. In white wines, butterscotch, smoke, hazelnut, and almond characters are common. Being a vigorous fermenter means that it will run hot and fast if you let it get away from you, so rein it in if possible. For best results, 53 to 82 degrees F is recommended. Tolerant up to 16% alcohol.

I ran out of D254 yesterday. It is a great yeast for Merlot.
David B on Mar 27, 2021
Very good MLF compatibility. One of the lowest methanol-producing yeasts. Using for meads and melomels. Makes red ferments jammier and white ferments butterscotchy.

Yeast worked great .
Ordered this yeast for my Marquette - fermented fully, and brought out some of the spice characteristics in the wine.

D254 is perfect for dry wine. always turns out perfect. Not too high alcohol content but just enough. Not easy to find on the market. glad we found it here.

After consulting with the people from Lallemand, I decided to use a D254 for half of my 2013 Chilean Malbec. The other half I used D21. I then blended them back together prior to secondary fermentation. It is an awesome way to see what different yeasts contribute and when they come together they make even a more complex wine.
