(Makes 5 gallons) Erik Beer was the president of the local homebrew club, Doze, for a number of years.  During that time he created and perfected recipes for a number of different brews, this easy-drinking Cream Ale being one of them.  Featuring a blend of Pale and Pilsener Malt with some Flaked Maize thrown in to lighten things up, this beer is sure to be a hit.  Hopping is light on this, but definitely enough to balance things and make this brew go down smooth.

Beer has been in the primary fermenter for two weeks and there is no noticeable activity. The color seems to be significantly darker then the recipe picture. Any thoughts?

BEST ANSWER: I just made a cream ale yesterday (03-10) which turned out darker, too. Not sure why. But I put Safale-05 dry yeast in it about 9pm at 67 degrees & had some activity this AM.
If you don't have activity after two weeks, try using a new packet of yeast. But going this long with no activity, may lead to contamination since the yeast activity helps hold down contamination. Don't give up after all the work when a seven dollar pack of yeast may save the day, but act quickly. GOOD LUCK!
Is the ingredient sheet accurate? I put the ingredients into BeerSmith and coming up with a 6.8% beer, 34 IBU which is out of style guidelines.

BEST ANSWER: Hi John - What do you have your efficiency set at in BeerSmith? Our kits are typically written with a 72% brewhouse efficiency. Agreed over 1% ABV is a bit of a large gap.

My new favorite cream ale
I bought this kit because i always have a big party at St Patricks day, and wanted something that I could dye green and not care if i have to dump it the day after. I have never really liked cream ales, they just kinda come out boring so they are great for green beer. Brewed the beer, and was blown away. I plan to keep this on my standard rotation for a while. I would definitely recommend this beer.

Crowd pleaser
I brewed this as a BIAB. The results were great. Nice golden color, thin creamy head and smooth taste. It was even popular with the flavored water (aka light beer) drinkers. I'll be trying this one again.

Great laid back beer
Brewed this for my wife, didn't last long after the neighborhood hit the kegerator. Well balanced. I like what the flaked corn does to the beer. There's already another of these kits sitting at my house waiting my next brew session and spring drinking.

Fantastic Brew
This turned out to be much better than I would have ever expected. My O.G. was 1.062 & F.G was 1.009 so it finished out well with US 05. Putting my ABV. at 6.8% or so. This is one smooth & tasty beer. I'm normally an IPA guy but I will be doing this again for my second tap.

Outstanding Brew
I brewed this ale at a mash temp of 150 (recirculation mash system), used Wyeast 1056, 14 days in primary (SS Brewbucket @ 67 degrees) then to my corny keg for 1 day at 65 degrees, crashed to 35 degrees for 1 day then 11 psi for 14 days.....perfect brew, this reminds me of a midwest old style brew (grain belt?) I really am not into clarity so that is not a big deal to me, I am into clean, great finish and taste. and good lace down the glass ware. Overall this is a 8.5 out of 10, I will brew it again and compare it to the first one. I like lighter brews not to hoppy, so this is a great brew that came in 5% ABV, perfect for a school night! Pairs well with seafoods. Just for note I would like a bit more body, so I may play with the mash temp, but not much.
