The classic and most popular German wheat beer strain used worldwide. Produces a balance of banana esters and clove phenolics. Sulfur is commonly produced but will dissipate with conditioning. This strain is very powdery and will remain in suspension for an extended amount of time following attenuation. This is true top cropping yeast and requires fermenter headspace of 33%.

Attenuation: 73-77%
Temperature Range: 64-75° F (18-24° C)
Alcohol Tolerance: approximately 10% ABV

Best for a sweet banana kind of Heff
This is my favorite yeast to use when making a Heff. Ferment at 72 degrees and enjoy the banana notes.

This is my favorite weizen yeast.
I love this yeast and find the Wyeast pack is always reliable and healthy. This yeast produces great aromatic wheat beers.

The Best Cider That I Have Tasted
I'm not sure if anyone else has used this to brew cider, but I decided to do it and it is, by far, the best cider that I have ever tasted. It has an extremely smooth and different flavor.

This yeast fired up 12 hrs lag time with a very vigorous fermentation for my Hefeweisen. It’s still working 6 days after pitching.

Very happy with this.
Very happy with this yeast. Fermented to just the right balance of banana and clove in 3 days. Made a 1 liter starter 24 hrs before brew day, Great summer beer.

Very good German hefe yeast
Made a starter with 2 packs of 3068 since I was brewing a weizenbock. Fermentation started off quickly & within 4 hours. Attenuation was very good too & exceeded what I expected. The total time for complete fermentation was only about 1 week. Flavor and aroma are good & will be kegging the beer soon. Very satisfied.

Be careful with this one - after 16 hours in my fermenter, it exploded through the airlock. Best to use a blowoff tube or increase your headspace.

I fermented at 62F ambient temp, and got more clove taste than banana (alternatively, I've read if you ferment warmer you'll get more banana than clove).You will not go wrong with this yeast.

Perfect for the job at hand
Used this to ferment a Sahti with a 1.082 OG. Direct pitched and had a full krausen within 24 hours. Gave me a great banana character at 64F.
