Viking Pale Ale Malt is the perfect base malt for traditional Pale Ales, IPA's, Ambers, Browns, Porters, Stouts, etc.. As a traditional english style pale ale malt it has a high degree of modification making it very easy to mash. 
 
The rich maltiness adds layers of flavor to any ale. 
 
Viking Malt is one of the largest malting companies in the world and the largest roaster of specialty malts. They are the main malt supplier to the famous Carlsberg brewery. Viking is not well known in the USA because they haven't had good US distribution. Because MoreBeer! and MoreBeer! Viking Malt has 6 malthouses in areas where distinctive Nordic barley are sourced: in Halmstad, Sweden; Vordingborg, Denmark; Lahti, Finland; Panevezys, Lithuania and in Sierpc and Strzegom, Poland.  The advantage of northern European malt is lower protein levels, good kernel size, and less amount of pesticides used due to the cold winters.

What is the diastatic power of this malt?

BEST ANSWER: Message from Viking Mal:

We don’t test diastatic power on Golden Ale, because it isn’t part of the general specification for that quality.
Our brewmaster told me that on average Golden Ale has some activity and the diastatic power is about 20 intner -> ~54 WK.

Poor Efficiency
Good flavor in a SMASH beer but low efficiency. I ordered milled as usual since I don’t have a mill but knew from the start efficiency would be low since it was mostly husks. Even did a 90 min mash hoping to compensate. Don’t know if that’s bad milling or bad grain but won’t be using again.

Low Efficiency
Just mashed with 10lbs of Viking (75% of mash). Perfect single infusion mash held at 154 for 60min. Was very slow to convert (took 45 min for iodine test to finally show complete conversion). Pre-boil gravity after mash was .013 lower than target (was 1.039 vs. target of 1.052). I've never had a mash be that far off. Not sure what the exp date was, but could not have been very fresh. Maybe they just don't sell enough to keep supplies fresh?
Anyhow, will not use Viking again unless freshness/viability can be assured!

It's pale malt
The milling was a little fine, but I definitely prefer too fine to too coarse. I've only used it in stouts so far I think, so I can't speak too much to the color, but I hit my gravity targets, and the flavor is on point. Does its job.

Makes pale ales brown
You get what you pay for with cheap malt sometimes. I've tried this in multiple NEIPA and pale ales and the wort is brown even with nothing but this and flaked oats and/or wheat. Very disappointing. I recently did some very small test batches and was able to confirm it was the malt and not another factor.
