Syrah is a Cote du Rhone isolate used for Syrah, Merlot and Carignane. It is a high glycerol producer and offers good mouthfeel and stable color extraction. It requires high nutrient levels and shows the best sensory results when rehydrated with GO-FERM. Typical aromas include violets, raspberries, cassis, strawberries, black pepper and grilled meat. This is a great all-around yeast, which can be used by itself or for it's mouthfeel and top-notes in a blend. Best results with fermentations between 59 and 86 degrees F, alcohol tolerant to 16%.

I had 3,000 lbs of high end Syrah from Eastern Wa., ph at 3.25 and brix at 25. I always follow the protocol of More Wine with great results. The temperature at the time of inoculation was about 62 degrees, this yeast took off in about 24 hours, continued to absolute dryness in 9 days. We are in ML now, early assessments are excellent. This is the first time using this yeast and I think it is a great strain. I have been a wine maker since my early teens back in the 70s, I will use use it again.

SYR yeast early experience
My first time using this yeast in my 20 years of wine making. Package says yeast will perform in temps of 59 to 85 degrees. After rehydrating with GoFerm and pitching the yeast into 60 degree must, it did nothing for 2 days. After applying a heat blanket and raising the temp to 75, it took off. So it seems this yeast likes heat folks.

I made two batches of high quality Shiraz grapes - one with the Syrah and another one with Clos. Batch of Clos was completely OK, but batch of Syrah was far better.

I use this yeast for mourvèdre, syrah, carnelian, and malbec and get good consistent results.

Syrah is for syrah
This is the kind of brotherhood of grape and yeast that evolves over centuries and powers the native ferment movement. These two seem made for each other by natural selection.

Syrah is my first choice for fermenting syrah and I love Rhône blends and varietals.

The Syrah Yeast did great
The yeast fermented really well and the yield was great. It does need more time in the barrel but so far so good. I have used this yeast for some years now and will continue to use it as the Syrah has been spectacular

Syrah yeast is great for adding spice and interesting layers to your Syrah fermentations.
Perfect choice for adding spice to Syrah fermentation. I have used Syrah yeast for the past five years on a portion of my Syrah fermentations to add a layer of white pepper spice. Highly recommend it's use, but be aware of it's nitrogen needs.
