Formally US-56, US-05 is a strain of yeast that creates that classic American profile of clean malt, crisp taste, low diacetyl, and ability to ferment in a wide range of temps. Look for US-05 to be the next popular dried yeast.

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

Fresh is Best
I am always happy to throw in a pack or two in an order because I know it will always be fresh from MoreBeer! Other companies have sent me dried yeast past its Best by Date and or getting close to it.

Versatile Dry Yeast
I can't predict my brew days so easily, so dry yeast offers convenience over liquid: it stores better and has higher cell counts, and you don't typically need a starter. I use this one the most as it is a good choice for virtually all American style beers. I brew west coast IPAs, pale ales, brown ales, and cream ales with this one. For an NEIPA dry yeast option, I've seen some suggest S04, but take my word, if you load galaxy or mosaic into a beer brewed with this yeast, you'll pour yourself a mouthful of delicious. Just close your eyes and pretend it is hazy.

Reliable transportation from wort to beer.
It's safe it's reliable. It's not sporty or luxurious but it will definitely get you from point A to point B. Keep a spare packet handy in case your liquid fails.

Works well everyone I've used it! (I brew 5 gallon batches and use one packet). Rehydrating seems to make it start working quicker by 12-24 hours.

Would recommend
Always have good fermentation using this. Have tried liquid yeasts with marginal success even shipping with “cold packs”.
