Safale S-04 English Ale Yeast - Fermentis

Homebrewers love this commercial English Ale yeast for its big, clean flavor; its rapid fermentation; and its highly flocculant character.
Widely recommended for practically any American or English style beer, S-04 yeast a rapid starter and finisher which settles out extremely well, leading to a clean finished beer. Great to keep a few packets as back-ups or just to use as a less-expensive alternative to liquid cultures.
This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.
Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Recommended temperature range: 64F-72F.

What is the alcohol tolerance of this yeast? I didn't see it mentioned on the TDS.

BEST ANSWER: At least 8% - because that's what my imperial stout came out as. This is a pretty great yeast. It's crazy fast (control ferm temps) and the yeast cake clarifies into concrete at the bottom of the fermenter. Mostly I use US-05.

Great Yeast
The dry yeast is superior to any of the liquid yeasts. The liquid yeast arrive with very few live yeast cells. The dry yeast starts up very quickly and finished strong.

Might try some liquid yeast when the weather gets colder.

Great Product, Interesting Shippong Choice
When I got this package, it came in a HUGE box. At first, I thought that it was 10 whole pounds of malt, but when I opened the box, I saw that it was the small 11 gram bag of these yeasts! I thought it was really funny how they chose to ship it! :). Evererything came as expected thoguth, so I have no complaints whatsoever.

Good all-around dry for Brit ales
I've used S-04 for numerous English bitters, porters, stouts. Gives that nice Brit profile, no esters if you keep it on the cool side. I usually run it around 64-68F, with great results. Works great for cider, too, as it doesn't ferment too dry, usually around 1.005 or so.

New go-to yeast
I've used liquid yeast for years and years and have gone to this yeast as my house yeast, drops out fast and holds firm to the bottom of the bottle for a nice clear pour. No more hassle of summertime shipments and you can keep more on hand. Eliminates the hassle of starters also. I rehydrate in wort and gently stir on a stir plate about an hour ahead of pitching and it start right up. Dry yeast has really come a long way.

Fast and Clean!
To those new to brewing, play it safe with Safale S-04. Don't worry about hydrating, pitch it dry and stir it in. It works fast and clears out fast. I typically get crystal clear ale in 4 days with this stuff. I've tried several and keep coming back to this one. I brew 3 gallon batches on the stove top, use 1/2 pack, tape it shut and use the rest within a couple weeks with no problems.

Always keep some on hand.
Mostly use liquid yeasts with a yeast starter. Always like to keep a couple of varieties of Safale dry on hand. Easy to store and lasts a long time. Handy to have in case of a yeast emergency.
