Witbier is a very old beer style, and one that almost disappeared until Pierre Celis revived it in 1965. These beers get their name from their white appearance due to unconverted starch in the brew. These white beers were some of the first styles to use hops in the eleventh century, but today they are principally known for their use of herbs and spices to provide complex flavors and bitterness - the style has come full-circle! Belgian Witbier has a smooth creamy body from the use of wheat and oats, and a spicy finish that comes from the yeast as much as from the addition of herbs. It is a very refreshing beer and a good gateway beer for those that don’t care for the more aggressive bitterness of hops in craft beer today.
