BEST ANSWER: The weight of honey will depend on the intended alcohol content of the brew. We suggest using a recipe calculator to get an approximate target. A general rule of thumb for honey and other sugars is that 1 pound per gallon will get you 4-5% abv and 2 pounds per gallon will yield 8-10% abv. Of course your mileage will vary based on yeast choice and performance.
I thought your OB honey used to be touted as California Orange Blossom. Did this change do to the wild fires?

Good smelling
Making mead with this for first time. Will have to see in 6-10 months how it turns out. One of the better honies I have used for mead.
