Kveik is a Norwegian word meaning yeast. In the Norwegian farmhouse tradition, kveik was preserved by drying and passed from generation to generation. Kveik is the original, traditional dried yeast! The LalBrew Voss strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980s and generously shared it with the wider brewing community. LalBrew Voss supports a wide range of fermentation temperatures between 25-40°C (77-104°F) with a very high optimal range of 35-40°C (95-104°F). Very fast fermentations are achieved within the optimal temperature range with full attenuation typically achieved within 2-3 days. The flavor profile is consistent across the entire temperature range: neutral with subtle fruity notes of orange and citrus. Flocculation is very high producing clear beers without filtration or use of process aids.

I've played around with the liquid Voss Kveik strain from Omega, but haven't tried the dry version yet. I like the Voss a lot and hopefully its characteristics carry over well when it's in a dried form.

I picked this yeast due to me living in sacramento and not having a beer cooling system, yet for that matter. Pitch the yeast let it ferment for 2-3 days it's most likely finished.

Great yeast, questionable shipping
I got this yeast with free shipping on a larger order. However, the yeast was shipping from the east coast and the rest of the order from the west. Unfortunately they shipped this packet alone in a cardboard box! If I knew it would be so wasteful for a single yeast packet, I would have reconsidered and asked my local shop to carry it. I think it would be nice for MoreBeer to offer "envelope" shipping of $0.50 for all 11-12g dry yeast packets.

Okay, but shipping aside, I pitched about half the packet directly onto oxygenated wort at somewhere between 85 and 90F - a 1.068 OG IPA. It was fermenting vigorously in hours, and after about 20 hours it was down to 1.016, at which time I transferred to a keg. It continued fermenting for several more hours under pressure, and it was completely 100% done fermenting in under 48 hours, so I put the keg in the refrigerator to finish carbonating and for the yeast to drop. Initial (very yeasty) tastes indicate a clean ale fermentation, with the hops running the show. It's a complete game changer for home brewers who want to brew a beer, ferment it, and enjoy it less than a week later.

Voss Kveik in dry format, yes!
A dry form of Kveik which is exactly what I wanted. Liquid yeast is nice but when you have kids either brew day gets delayed or one of the little rug rats things the yeast pouch is a juice pouch.
