Kveik, the original, traditional dry beer yeast! Kveik is a Norwegian word meaning yeast. In the Norwegian farmhouse tradition, kveik was preserved by drying and passed from generation to generation. The LalBrew Voss strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980s and generously shared it with the wider brewing community. LalBrew Voss Kveik supports a wide range of fermentation temperatures between 77-104°F with a very high optimal range of 95-104°F. Very fast fermentations are achieved within the optimal temperature range with full attenuation typically achieved within 2-3 days. The flavor profile is consistent across the entire temperature range: neutral with subtle fruity notes of orange and citrus. Flocculation is very high producing clear beers without filtration or use of process aids.

Beer Styles: Norwegian farmhouse ales, neutral ales
Aroma: Relatively neutral at high temps, slight orange and citrus notes
Attenutation: Medium to High
Fermentation Range: 77-104°F (Optimal: 95-104°F)
Flocculation: Very High
Alcohol Tolerance: 12% ABV

I've played around with the liquid Voss Kveik strain from Omega, but haven't tried the dry version yet. I like the Voss a lot and hopefully its characteristics carry over well when it's in a dried form.

How many grams per gallon at 70°f of the dry voss? And what happens if you over pitch?
William Grabowski on Sep 23, 2020
BEST ANSWER: The small packs of Lalbrew Voss are meant for 19 liters of beer. Over pitching Voss leads to neutral sensory characteristics.

Great stuff
2 packets in a 12 gallon batch, no starter or prehydrating and I had a vigorous fermentation in 2 hours.

Direct pitch in homage to Interstellar Automaton originally brewed by Modern Times and collab with Automatic Brewing of SD. Direct pitch to wort at 94F. Started to ferment in JUST 2 HOURS, done in 3 days, OG 1.070, FG 1.014. Truly everything it is advertised to be. Amazing will use again!

Fast, phenomenal yeast
As a homebrewer particularly interested in recipe development at the moment, I'm looking for a yeast that's fast, fairly clean, and tough to mess up. This yeast is 11/10 on all of those fronts - it drops out like a rock in about 2-3 days, ferments in 48 hours at 95?, is quite clean while contributing subtle esters (hard to place, but vaguely orange-peel), and just seems unshakably committed to fermenting with little help. No oxygenation need, per the instructions, and you just need a heat pad and a few days. I just brewed a very solid Berliner "Vosse" in 7 days, kettle souring included (see Lallemand's SourPitch).

Bottom line, buy this immediately and give it a shot in, really, any style you can think of

What a great yeast. Fast fermentation with a great floral taste. Works good at low temp fermenting. I will use it again.
I was a little worried that I just messed up a batch of beer that cost 50 dollars to make, lol.
I made my Imperial Stout and tried the Voss/ Keivik Yeast. I had done no research on this yeast and bought two 11 gram packs. I miss understood the pitching rate on the package . I interpreted it saying o.5 to 1.0 packs per gallon, lol. I pitched 22 grams on 5 gallons and once I realized the amount to use it was too ate. Beer Gods saved me, it fermented in 3 days and turned out a little dryer than I wanted. I checked the gravity it was FG-1.012. And the OG was 1.112. It has a nice floral aroma in the front but over pitching gave it a alcohol finish, but not bad at all. I chilled it down to 40°f and drank it. It was great , hardly any alcohol finish. I will not over pitch next time. My fermentation temp was about 70°f - 72°f. I will use this yeast again.

Good Yeast
I've used this yeast for 3 different brews now, and it's currently cranking away at a 4th (sour this time). I keep it as high as my Grainfather conical will heat, which is usually around 93-94 degrees in my basement with ambient temp of 68.

Every beer has finished fast and tasted great! Definitely recommend.

Orange Zest
Split wort of Red IPA into two ferm vessels, pitched Kveik in one stored at 82°F and second using WLP-001 at 63°F. Kveik was done in 3 days, dry hopped and in the keg by day 7. Once 001 finished and carbed conducted semi-blind triangle test. Was able to pick Kveik sample every time due to not unpleasant (but not subtle) Orange zest flavor. While I liked the Kveik, I found the yeast flavors dominated the hops and preferred the 001 for a Red IPA. Will explore use in a Blond or at lower temps.

Easy and Excellent
I brewed a Simcoe SMaSH and pitched this. It was super easy (no rehydration needed) and it chewed up the sugars without causing any blow-offs. Started the temp at around 78 and ramped up to 85 over the course of a few days. I was actually slightly over on my intended FG but I think I mashed a bit low.

Would recommend to anyone!

I am a Kveik Convert
I bought this because I was interested in trying a beer with a Kveik yeast, but I only do small batches so I didn't want to invest in a large packet of liquid yeast that I wouldn't be able to fully use. I brewed a 1 gallon "Pilsner", pitched 5grams of this yeast, and fermented at 85F. 48 hours later, it was done. I let it sit another day, just to be sure, then batch primed and bottled it up. Four days later I was drinking my creation, so seven days grain to glass with no off-flavors. Not bad.
The resulting beer was good, it was much fruitier than a true pilsner, but it's an excellent lawnmower beer nonetheless and I'll be making this one again. Plus, I still have a half-packet of this yeast left for another experiment.
Highly recommended.
