Description

The perfect dry yeast strain for brewing traditional Kölsch-style beers and other neutral ales. LalBrew Köln's neutral character accentuates delicate hop aromas while imparting subtle fruity esters. Through expression of a beta-glucosidase enzyme LalBrew Köln can promote hop biotransformation and accentuate hop flavor and aroma. Colder fermentations will be more neutral in character, while warmer fermentations will have more fruit-forward ester profile.

Aroma: Sightly fruity, more neutral with colder ferments
Attenutation: Medium to High
Fermentation Range: 54-68°F
Flocculation: Medium to High

Excellent crisp clean Kolsch yeast!
This was the first time I have tried this yeast and because it is fairly new, I couldn't fine a review that explained it well. Now that I have brewed a Kolsch with this yeast, I provide the following:
- There is a significant lag. The fermentation didn't start until the third day after I brewed.
- I attempted to ferment at 55 degrees and I couldn't get it going at that temperature. This could be part of the long lag time. At 63 degrees it started and fermented just fine.
- It took nine days to complete the fermentation at 63 degrees.
- My OG was 1.053 and my FG was 1.004. This was a very complete fermentation. The beer was very clear.
- I used a 3/8" blowoff hose and didn't really need it. I believe a simple air lock would have worked fine.
- The taste was very crisp with almost no fruity flavor fermented at this temperature.
I will definitely use this yeast again. I highly recommend this yeast for a refreshing, crisp, clear Kolsch.

Belgian Esters from warm fermentation
Held at 68° in ferm chamber, results where not fruity kolsch yummies I get from liquid yeast. Tastes like a Belgian yeast strain, which my wife and neighbors love, but I cannot drink.

Works Well at 72ºF
I choose this yeast because it's harder to ferment at lower temps down in FL. I typically ferment at 72ºF for all my brews and was interested in this yeast because it works within that range. The beer came out well. Great tasting Kolsch style and very clean/clear. let the beer sit in my SS Brew Bucket for two weeks then racked to keg and let sit for a month at 45ºF. I used this yeast with the "Kolsch Ale" kit from Morebeer and will definitely be brewing more in the future.

Great yeast- clean & quick, tolerates a higher temp ferment.
I just made a Kolsch with this- fermented very clean and fast (was done in 4 days). I fermented at a warmer temperature than advised (temp was mostly in the high 60s low 70s during the ferment) but of my 6 or 7 Kolsch I’ve ever brewed this easily tastes the best and I’m giving most of the credit to this yeast. Give it a shot!
