Description

There’s no mistaking that distinct aroma. A quick whiff and suddenly you’re overwhelmed with a sense of warmth and well-being. You perk up a bit in anticipation of that first sip of the day. Truly there’s nothing quite as satisfying as a dark, full-bodied, grande-sized mug of… stout!?

Put All Out Brunch Stout next to a glass of cold brew and you might have a hard time telling which is which. Within this jet-black libation lies an unfathomable depth of flavor. Inspired by Founders Breakfast Stout®, this clone recipe combines dark malts, cacao nibs, and two additions of coffee grounds to make a stunningly complex brew. Flavors of sweet chocolate, bitter coffee, and a roasted aroma will have you floating toward the kitchen table with cartoonish anticipation. When you snap out of it, put down the spoon, take off the bib, and pour yourself a satisfying glass of All Out Brunch Stout.

Please note: this recipe calls for 2 oz of Kona and Sumatra coffee grounds, which are not included in the kit.

it's an excellent stout, especially after I add additional items like dextrose and unsweet cocoa powder

are the cocoa nibs included?
Edward Bell on Jul 28, 2020
BEST ANSWER: Yes, they are included, although the directions for how to use them were pretty sparse, i.e. should you grind them and when should you add them to your brew. I wound up with barely detectable chocolate flavor. Good beer anyway, I plan to brew it again!
Am I supposed to buy 1 pound of each kind of coffee and roasted my self to make this beer?
Erick Batista on Oct 28, 2020
BEST ANSWER: I bought a pound of Sumatra coffee beans. I couldn't find Kona so I used Tarrazu, which is the coffee I normally drink. I ground them both in my coffee grinder, but if you don't have one, I think just buying already ground coffee would work fine. Unless you are into roasting your own coffee, I would buy already roasted beans or grounds. I thought that the coffee flavor in the finished beer was not pronounced, but pleasantly there in the background, so I doubt that having the exact type of beans is too critical. By the way, I thought the beer was excellent and I intend to make it again. Cheers!

Outstanding beer. I added extra coffee and a pound of lactose. Very yummy. I am going to keep this continually on tap.

Beer it’s not just for breakfast anymore.
Delicious coffee and chocolate flavors and great abv strength without that boozy sensation. I will get it again.

Excellent stout
I brewed this in November 2019 with several modifications. I added 1 pound of dextrose for a bit more alcohol. I reduced both coffees by 30% and added cocoa powder in the secondary fermenter to increase chocolate. I slightly reduced the hops (used 0.8 oz Nugget then recommended Willamette)considering the bittering added by the cocoa. I also added 6 oz bourbon and 1.5 oz Penzey's vanilla extract right before kegging. Saccharification rest at 154°F so a bit sweet. I used two packs of US-05 and got 73% attenuation (below my target) for 8.1% alcohol.

This large grain bill gave me 7.3 gallons mash in my 10 gallon Chapman mash tun, so all was well, but near the practical limit.

The result is sublime, a delight to consume. Sweet with heavy coffee and moderate chocolate. I am very fond of Founder Breakfast Stout and I prefer this stout, believe it or not. Highly recommended.

Just went into secondary, but if the gravity sample is any indication, it will be hard to let it age out. Put a lb of D180 in for 20 minute steep with the coffee, should be fun!!

Excellent!
I brewed this 6 weeks ago. I used 1098 British Ale yeast with a big starter, I couldn't find the Kona coffee called for, so I used Costa Rican Tarrazu instead.
I tried it a few days ago and I think it is one of my best brews ever. I got many compliments about it at a party the other night. I'm sure I will brew it again. Only issue is that the directions are split up and a bit confusing. Read all of them carefully.

fantastic
Brewed this and followed recipe. Been in the keg for about 3 weeks and decided to tap it this weekend. Fantastic beer; I had 3 friends over and each said this may be the best yet and I've been brewing for over 15 years. I was encouraged to brew this again immediately in order to have another keg ready to go.

This is very good. I make my own maple syrup so it’s even better.
