Description

Isolated from the Burgundy region of France. Recommended for red varieties where full extraction is desired. Color stability is maintained throughout fermentation and aging. Aromas of ripe berry and fruit are emphasized while respecting pepper and spicy notes, as well. Alcohol tolerance of 16%. Ferments well from 59 to 86 degrees.

how much yeast per ton of grapes?

BEST ANSWER: Hi John, the dosage rate for yeast is 1 gram of yeast per 1 gallon of must. 1 ton of grapes can yield about 160-200 gallons of must. Therefore, you would need 160-200 grams of yeast. For these 5 gram bags, you would need 32-40.

RC-212 yeast
For red wines, this is in my opinion the best way to go for flavor and alcohol content. It's a slow fermenter but worth the wait. I would certainly recommend it.

Good yeast for reds
I purchased some of this yeast as a backup option for re-packaged D254 and D80 yeast that I wanted to use for this year's wine. Good thing that I did, because both those re-packaged yeasts were dead and did not activate. RC212 saved the day and I'm using it in a 50/50 split fermentation of a Cabernet with D21.
