Pinot Grigio / Gris is a less intense version of Pinot Noir. The delicate nature of the grape translates into a classic white wine. These grapes will make a full-bodied, flavorful wine to be finished dry or with slight residual sugar.
Grown on Underwood Mountain in the Columbia Gorge area of Washington State. At elevation of 1600' these grapes are grown in a very cool environment and are actually not harvested until October. Peter Brehm has been working with this vineyard for close to 10 years and absolutely loves these grapes. He says they consistenly produce a lean, crisp, aromatic style of Pinot Grigio that in every way can rival the best from Europe. He even mentioned he loves them with Scallops so let your imagination run with that!

Yeast Recommendations
Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.
You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.
BA11 - In Pinot Gris, floral, peach, apricot, and tropical fruit elements are developed, along with clean aromatics, lingering flavours, and an intensified mouthfeel. Good single-strain choice.
Rhone 4600 - Peach, apricot and tropical fruit with enhanced mouthfeel contribution. Delivers fat roundness and balance along with light esters. Good either as a single strain or as a blending component.
D47 - Tropical fruit, along with a rich mouthfeel is brought out by D47 in a Pinot Gris. Lees contact gives rise to ripe spicy aromas with tropical and citrus tones developing. Adds volume/mouthfeel. Lees aging recommended. Good single-strain or as a blending component.
