Moody Vineyard, located in the Columbia Valley AVA, is perched high above the confluence of the trout-filled Deschutes River and the Columbia River. Western basalt cliffs help shield the vines from the wind blowing down the Columbia Gorge. The east slope offers early sun and provides heat to ripen and develop premium Cabernet Sauvignon and Cabernet Franc wine grapes. One of the furthest westerly vineyards in the NW to ripen these varietals successfully.
Cabernet Franc is often blended with Cabernet Sauvignon, Merlot and Malbec. It also makes a stunning varietal wine. A local winery has recieved numerous medals from their pure Cab Franc from this stunning vineyard.

Yeast Recommendations
Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.
You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.
MT - Ability to enhance varietal fruit and floral aromas, along with strawberry jam, caramel, and spice notes. Good colour stability along with enhanced tannic structure and rich mouthfeel. Great by itself or as part of a blend.
BDX - Good all-around choice for berry, plum, and jam in the Classic Bordeaux profile. Moderate rate fermenter with good colour retention. Useful for developing structure in the wine by re-enforcing existing tannins- both good and bad, so don?t use with un-ripe fruit.
D80 - Big volume and fine grain tannin. Great for bringing more positive tannin intensity to a blend.
