Description

A09 Pub is a highly sought after strain that home brewers swear by due to is ability to achieve brilliantly bright ales in a short amount of time. Because Pub is extremely flocculent it will tear through fermentation and drop out of your beer quickly. This strain will produce higher levels of esters than most ale strains. A sufficient diacetyl rest is highly recommended when using A09 Pub.

Usage Instructions:
  • ​Store refrigerated until ready to pitch
  • Shake and kneed pouch to homogenize slurry
  • Sanitize the sealed pouch
  • Open and pitch entire contents into well-aerated wort

Trouble with yeast during hot season -be careful
Packages arrived "Hot" - very hot. Bag had expanded almost to the point of exploding. This despite my paying extra for two ice packs, along with an insulated bag. The person at More Beer was very polite and suggested I build a yeast starter to determine if the yeast was still viable. Problem is that I buy imperial yeast so I don't have to build a starter. Second problem (and my biggest concern) is that the yeast have been severely Strained and it's not clear that off flavors have not already started to build. Not worth the risk. Suggest people consider your local temperatures when ordering temperature sensitive materials. Along with this shipment was 5 other types of yeast and I think it's all bad.

Crazy Fermentation
I ordered this yeast and had it shipped with two ice packs and in it's own protective package. When it arrived, the ice packs had gone warm and the yeast \was pretty warm as well, which worried me. I put it in the refrig for about 10 days and finally brwed my Imperial Porter. I made a double yeast starter for this yeast in case cells had died in shipment. I oxygenated my wort and added the yeast. It began fermenting 2 hours later and was one of the wildest fermentations I've ever had. Brewed it two days ago and still going like mad. Looking forward to the end product.

A Real Workhorse
I have used this yeast at least three times. It is very aggressive, takes off like a race horse, and finishes very quickly. For every beer with this strain, I have done a diacetyl rest, raising the temperature 3-4?_F to take care of the very junior-young-green flavors. This always did the trick.

I would also agree with the other reviewer about the can. The yeast does stick in the can. The best bet is to warm the can up a bit (I know, I think it says pitch cold), give it a good shake, and the pour. Those of you who have had experience with the older White Labs tubes will know how yeast can get a little caked if it is sitting long. I think this yeast is similar, particularly if it has been sitting idle for a few months.

Disappointing
For a first attempt at using an Imperial yeast, I decided to pair the Pub with a Honey Blonde Ale I was creating. The entire brew and fermentation stages worked out without any problems but the resulting ale has off flavors and a disappointing taste. I won't completely write off Imperial but it'll be awhile before I try another experiment with their yeast.

Worked as described
I have a Wee Heavy, finishing in secondary, that I used this yeast for. Probably not a good style choice for this beer but so be it. The OG of 1.098 came out of primary at 1.025 after 6 days so not a bad performance so far. It flocs very well and racked almost perfectly clear.
Only bad mark I can say was when I opened it, cold and well shaken, the yeast was caked and stuck on the cans bottom and had to be scooped out with my finger. Worried me a bit but my hands had been wet with Star San and no evidence of buggies so far.
I am doing an ESB with it next, and will update you as to the Wee Heavy's progress and the ESB.

The wee heavy has drawn raves from friends and the British ale I brewed next is one my better ales thus far.
I highly recommend this strain and will be ordering more for sure!
BTW....the 2nd can behaved well, and fermented a 10.5 gallon batch in my Speidel with just the one can!
