Kombucha is a fermented beverage made using water, tea, sugar, and a SCOBY, which is a Symbiotic Culture Of Bacteria and Yeast. Brewers make the tea but SCOBY makes the booch! A healthy SCOBY culture is key to making delicious tasting kombucha. You can either build up a SCOBY yourself from a store bought bottle of raw, unfiltered kombucha, or you can start from scratch with a fresh culture.
